The goal was to develop a plant-based burger built on something different, hemp protein. Unlike traditional bases like soy or pea, hemp introduced new challenges across texture, taste, and formulation. I helped lead the development process, working through iterations to turn it into a product that could actually scale.

The outcome was a functional hemp protein burger that successfully moved through formulation and iteration into a viable product. Key challenges around texture, taste, and binding were addressed through testing, resulting in a product that could compete within the existing plant-based category while offering clear differentiation.
